Paani Puri


This popular street food needs no description is what I feel. Paani puri is a favorite chaat of many folks and mine too. It is a flavorful burst in your mouth which tickles your taste buds. Preparing paani puri at home is not only a healthier way of enjoying it but you can even customize it the way you like it.


INGREDIENTS (To prepare paani):

  • 1.5 cups pudina or mint leaves
  • 1 cup coriander leaves
  • 2 to 3 green chillies
  • 1/2 tsp, black salt
  • 3/4 tsp, jeera
  • 1 1/2 inch, ginger
  • 1/4 tsp black pepper
  • Tamarind, gooseberry size (soaked in water)
  • 1/2 to 3/4 tsp salt
  • 1 1/2 tsp, jaggery
  • 2 to 3 cups, water

INGREDIENTS (To prepare paani puri):

  • Puris (home made, ready to fry, store brought)
  • 1 cup onion, finely chopped
  • 1 cup carrot, grated
  • 1 cup coriander leaves, finely chopped
  • 1 cup peas, boiled
  • 1 cup, green chutney
  • 1 cup, sweet chutney
  • Salt to taste
  • 1 cup, fine sev 

METHOD (To prepare paani):

  1. In a mixer jar, grind all the above ingredients.
  2. Add 2 to 3 cups of water to the ground paste. Adjust consistency according to your liking.
  3. Chill the prepared paani for few hours before use.

Assembling paani puri:

  1. First crack the top of puris with a spoon or using your fingers.
  2. Stuff with boiled peas, onions and grated carrots.
  3. Add a few tsp of green chutney, sweet chutney as per your taste.
  4. Sprinkle some salt if required.
  5. Garnish with sev and coriander leaves.
  6. Then add few tbsps of paani into the puri.
  7. The paani puri is ready to serve. Have them immediately before it gets soggy.
