This popular street food needs no description is what I feel. Paani puri is a favorite chaat of many folks and mine too. It is a flavorful burst in your mouth which tickles your taste buds. Preparing paani puri at home is not only a healthier way of enjoying it but you can even customize it the way you like it.
INGREDIENTS (To prepare paani):
- 1.5 cups pudina or mint leaves
- 1 cup coriander leaves
- 2 to 3 green chillies
- 1/2 tsp, black salt
- 3/4 tsp, jeera
- 1 1/2 inch, ginger
- 1/4 tsp black pepper
- Tamarind, gooseberry size (soaked in water)
- 1/2 to 3/4 tsp salt
- 1 1/2 tsp, jaggery
- 2 to 3 cups, water
INGREDIENTS (To prepare paani puri):
- Puris (home made, ready to fry, store brought)
- 1 cup onion, finely chopped
- 1 cup carrot, grated
- 1 cup coriander leaves, finely chopped
- 1 cup peas, boiled
- 1 cup, green chutney
- 1 cup, sweet chutney
- Salt to taste
- 1 cup, fine sev
METHOD (To prepare paani):
- In a mixer jar, grind all the above ingredients.
- Add 2 to 3 cups of water to the ground paste. Adjust consistency according to your liking.
- Chill the prepared paani for few hours before use.
Assembling paani puri:
- First crack the top of puris with a spoon or using your fingers.
- Stuff with boiled peas, onions and grated carrots.
- Add a few tsp of green chutney, sweet chutney as per your taste.
- Sprinkle some salt if required.
- Garnish with sev and coriander leaves.
- Then add few tbsps of paani into the puri.
- The paani puri is ready to serve. Have them immediately before it gets soggy.
