Set dosa is a popular breakfast served in most fast food or tiffin centers. A set of soft and thick spongy dosas are served with coconut chutney and vegetable saagu.
INGREDIENTS:
- 1 cup parboiled rice
- 1 cup raw rice
- 1/2 cup urad dal
- 1/4th tsp baking soda(optional)
- 1/4th tsp sugar
- Salt to taste
- Oil
METHOD:
- Wash and soak rice and dal in water together in a bowl for 4 hours.
- Drain water and grind to a smooth dosa batter by adding required amount of water.
- Transfer the batter to a bowl, add salt and let it ferment for about 12-15 hours.
- Before making the dosa add sugar and soda, mix well and the batter is ready.
- Heat a non stick tawa, pour a ladle of batter into small, thick dosas.
- Cook on medium flame, you spot tiny holes, that's when you add oil and flip the dosa to cook on the other side for few seconds.
- Make another dosa in the same way and serve a set of dosas with coconut chutney and saagu.
- Garnish dosa with grated carrot and finely chopped coriander leaves.
