When you are craving for something tasty at the same time healthier substitute for regular pulao, Broken Wheat Vegetable Pulao is the best dish.
As we have heard that broken wheat/ dalia is high in nutrition, iron and fiber it is a good option for people who are dieting as it is low on calories.
Broken Wheat Vegetable Pulao is a one pot dish which can be a good option for lunch or dinner. It goes well with any raita or plain curd.
INGREDIENTS:
- 1 cup, broken wheat/dalia
- 1 onion, sliced
- 1/2 cup carrots, diced
- 1/2 cup beans, chopped lengthwise
- 1/2 cup potatoes, diced
- 1/4 cup fresh or frozen peas
- 1/4 cup mint leaves, chopped finely
- 1/4 cup coriander leaves, chopped finely
- 2 tbsp ginger garlic paste
- 4 green chillies, slit
- Few curry leaves
- 1 bay leaf
- 2 tbsp fennel seeds
- 2 tbsp cumin seeds
- 1 inch cinnamon
- 4 to 5 cloves
- 1 star anise
- 3 to 4 elaichi
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1 tsp garam masala powder
- Salt to taste
- Oil
- Water
METHOD:
- In a mixer jar, add fennel seeds, cumin, cinnamon, cloves, star anise and elaichi and grind to a dry powder. Keep aside.
- Heat oil in a pressure cooker, add bay leaf.
- Add sliced onions, and saute until translucent.
- Add ginger garlic paste, green chillies and curry leaves, mint leaves. Saute for a minute.
- Add all the vegetables, add salt and saute for few minutes.
- Add the ground powder, red chilli powder, coriander powder and garam masala powder and mix well.
- Add washed and drained broken wheat and saute for two minutes.
- Add 2.5 cups of water. Add a tsp turmeric powder, coriander leaves and salt as required. Mix well.
- Close the lid and pressure cook for 3 whistles.
- Once the pressure is released, mix well and serve hot with any raita or plain curd.
