Pulav is comfort food at its best and you make it when you want to cook something quick, easy and satisfying. This one-pot dish made with rice and few veggies and spices, giving it a mild aromatic flavor.
This recipe is my husband's version which he prepares for me with love.

INGREDIENTS:
- 1 cup, basmati rice
- 2 long brinjals. chopped
- 2 medium onion, sliced
- 1 small onion, to grind
- 1 cup, green peas
- 1 cup, grated coconut
- 5 to 6 green chillies
- 4 to 5 cloves of garlic
- 1 inch piece ginger
- 1 bay leaf
- 1 inch cinnamon
- 10 cloves
- 2 tbsp, coriander powder
- Oil
- Salt to taste
- Water
METHOD:
- In a mixer jar, add grated coconut, ginger, garlic, green chillies, onion, cinnamon, cloves. Grind it to a smooth paste adding little water.
- Heat oil in a pressure cooker, add bay leaf.
- Add onions, turmeric powder and saute until onions turns translucent.
- Add chopped brinjal and peas. Saute for few minutes.
- Add the ground paste and saute until the raw smell is gone.
- Add washed and soaked basmati rice. Add salt to taste. Mix well.
- Add 2 tbsp coriander powder. Mix well.
- Close the lid and pressure cook for 3 whistles.
- Once its cooled. Mix gently.
- Serve hot with coconut chutney or any raita or plain curd.
