INGREDIENTS:
- 1 cup rice (basmati/white rice)
- 2 tbsp ghee or butter
- 1/2 tsp jeera or cumin seeds
- 1 medium onion, sliced
- 1 large tomato, finely chopped
- 1 medium capsicum, finely chopped
- 1 carrot, finely chopped
- 6 to 8 beans, finely chopped
- 2 tbsp frozen green peas/boiled peas
- 1 small potato, boiled and finely chopped
- 1 tbsp ginger garlic paste
- 1/2 tsp turmeric powder
- 2 to 3 tbsp pav bhaji masala
- 1/4th tsp red chilli powder
- 2 tbsp coriander leaves, finely chopped
- Salt, as required
METHOD:
- In a large kadai, heat ghee or butter.
- Add cumin seeds and let it splutter.
- Add sliced onions and fry them until transparent.
- Add ginger garlic paste and saute until raw smell disappears.
- Add chopped carrots, beans, capsicum, peas and saute until vegetables are cooked slightly.
- Add chopped tomato and fry them until the tomatoes turn soft and mushy.
- Add turmeric powder, red chilli powder and pav bhaji masala powder and mix well.
- Saute until oil separates from the masala paste.
- Add boiled and chopped potatoes. Mix well.
- Add cooked rice, salt and mix them well.
- Add chopped coriander leaves and mix well. Switch off the flame.
- Serve tawa pulao with raita or yogurt.
