Dry fruits burfi is a simple and easy sugarless sweet recipe made with dry fruits. This recipe can be experimented with your choice of dry fruits and nuts. It can be prepared on any special occasions, festivals or get-togethers. It can also be consumed as an energy bar especially after office hours, as the combination of dry fruits gives you good amount of energy and protein to satisfy your hunger. No sugar has been added to this recipe as dates and raisins adds to sufficient amount of sweetness for this burfi. This can be stored in an air tight container for about a month.
INGREDIENTS:
- 1 cup dates or khajoor, pitted
- 1/4th cup cashews, chopped
- 1/4th cup almonds, chopped
- 1/4th cup walnuts, chopped
- 1/4th cup pistachios, chopped
- 2 tbsp raisins
- 1 tbsp ghee
- 1 tbsp poppy seeds
- 1/2 tsp cardamom powder
- Firstly in a blender, take 1 cup of seedless dates. Blend them into a coarse paste without adding water.
- In a thick kadai heat ghee. Roast the poppy seeds and keep aside.
- In the same kadai add chopped cashews, almonds, walnuts, pistachios and raisins.
- Roast them on a low flame until the nuts turn crunchy and golden brown.
- Now add the dates paste into the kadai. Add cardamom powder and poppy seeds. Mix well.
- Fry them on a low flame by smashing the dates as that it combines well with the other dry fruits.
- When its mixed well, switch off the flame. Let it cool for 5 minutes.
- Grease your hands with ghee and roll the mixture on a plate to form a log.
- Wrap it in an aluminium foil and freeze for about 30 minutes.
- After 30 minutes the burfi will be set. Unwrap the foil and cut them into thick slices.
- Enjoy the dry fruit burfi for about a month when stored in an air tight container.
