Maddur Vada


Maddur vada is a very popular evening snack in the state of Karnataka. These are crispy fried patties loaded with onions and a mix of rice flour, semolina, all purpose flour and some herbs and spices.

INGREDIENTS:
  • 1 cup rice flour
  • 1/2 cup rava/semolina
  • 1/4 cup maida or all purpose flour
  • 1/2 cup onion, finely chopped
  • 2 green chillies, finely chopped
  • 2 tbsp coriander leaves, finely chopped
  • Few curry leaves, finely chopped
  • 1 tsp red chilli powder
  • Pinch of hing or asafoetida
  • 2 tbsp hot oil
  • Salt to taste
  • Water as required, to form dough
  • Oil for deep frying
METHOD:
  1. In a large mixing bowl, add rice flour, rava and maida. Mix well.
  2. Also add chopped onion, green chillies, curry leaves, coriander leaves, hing, red chilli powder and salt to taste. Mix it thoroughly.
  3. Now add 2 tbsp of hot oil into the mixture.
  4. Mix it with a spoon as the oil will be hot. After its cool squeeze and crumble with hand.
  5. Pour water little by little, mix well to form a smooth dough i.e like a chapathi dough.
  6. If the dough is sticky then add little maida and mix well. If the dough is too dry add required amount of water and mix well.
  7. Grease hand with oil and pinch small ball sized dough.
  8. Prepare ball and flatten over palms to for patties.
  9. Heat oil for deep frying. When the oil is hot on a medium flame, deep fry the prepared patties until it is crisp and brown on both sides.
  10. Remove it to a kitchen towel to remove excess oil.
  11. Serve maddur vada hot with coconut chutney.
