Maddur vada is a very popular evening snack in the state of Karnataka. These are crispy fried patties loaded with onions and a mix of rice flour, semolina, all purpose flour and some herbs and spices.
INGREDIENTS:
- 1 cup rice flour
- 1/2 cup rava/semolina
- 1/4 cup maida or all purpose flour
- 1/2 cup onion, finely chopped
- 2 green chillies, finely chopped
- 2 tbsp coriander leaves, finely chopped
- Few curry leaves, finely chopped
- 1 tsp red chilli powder
- Pinch of hing or asafoetida
- 2 tbsp hot oil
- Salt to taste
- Water as required, to form dough
- Oil for deep frying
METHOD:
- In a large mixing bowl, add rice flour, rava and maida. Mix well.
- Also add chopped onion, green chillies, curry leaves, coriander leaves, hing, red chilli powder and salt to taste. Mix it thoroughly.
- Now add 2 tbsp of hot oil into the mixture.
- Mix it with a spoon as the oil will be hot. After its cool squeeze and crumble with hand.
- Pour water little by little, mix well to form a smooth dough i.e like a chapathi dough.
- If the dough is sticky then add little maida and mix well. If the dough is too dry add required amount of water and mix well.
- Grease hand with oil and pinch small ball sized dough.
- Prepare ball and flatten over palms to for patties.
- Heat oil for deep frying. When the oil is hot on a medium flame, deep fry the prepared patties until it is crisp and brown on both sides.
- Remove it to a kitchen towel to remove excess oil.
- Serve maddur vada hot with coconut chutney.
