Idly fry is a mildly spiced sauteed dish made from idlis. The idlis are fried crisp and tossed with few spices. This dish can be either made using leftover idlis or the fresh ones. Normally a day old leftover idlis are suited the best as they do not tend to break or crumble. If using the fresh ones it can be refrigerated for about 30 minutes and then used. This dish can be served as a breakfast or an evening snack.
INGREDIENTS:
- 6 to 8 idlis
- 1 tsp mustard seeds
- 1 tsp jeera
- 1 tsp urad dal
- 1 tsp chana dal
- 1/2 tsp turmeric powder
- Few curry leaves
- 1 tsp garam masala powder
- 1 tbsp coriander leaves, finely chopped
- Salt to taste
- 2 tbsp oil
METHOD:
- Cut the idlis into small cubes.
- Heat 1 tbsp oil in a pan and shallow fry the cut idly pieces and keep them aside on a plate.
- Heat another tbsp oil in the same pan and add mustard seeds and jeera. Let it splutter.
- Add urad dal, chana dal, turmeric powder and curry leaves. Saute it for a minute.
- Now add the fried idlis to the pan. Add a tsp garam masala powder, salt and mix well.
- Garnish with finely chopped coriander leaves.
- Serve it hot as it is or along coconut chutney.
