Cheesy Veggie Pops


A good way to have children eat vegetables, delicious, healthy cheesy veggie pops is a great idea. It is great as an appetizer or a starter. An awesome recipe for pot lucks, kitty parties etc. These balls are loaded with a variety of veggies and cheese.

INGREDIENTS:
  • 2 to 3 medium sized potatoes, boiled and mashed
  • 1 capsicum, finely chopped
  • 1 onion, finely chopped
  • 1 cup finely cut carrots, boiled
  • 1 cup finely cut beans, boiled
  • 1 cup green peas, boiled / frozen peas
  • 1 cup grated cheese
  • 1 tbsp, red chilli flakes
  • 1/2 tsp oregano
  • 1/2 tsp black pepper powder
  • 2 to 3 garlic, crushed
  • 2 tbsp cornflour
  • Salt to taste
  • 1/2 cup bread crumbs
  • Oil for deep frying

METHOD:
  1. In a large mixing bowl, add mashed potatoes, capsicum, onions, carrots, beans and green peas.
  2. Also add grated cheese, crushed garlic, red chilli flakes, oregano, black pepper powder and salt. Mix all the ingredients well to form a dough. If the dough is too sticky add little cornflour.
  3. Make small lemon size balls and keep aside.
  4. In another small bowl, add around 2 tbsp cornflour and water and make a smooth paste. The paste should be a flowy consistency so that it coats well.
  5. Now dip the veggie balls in the cornflour paste. Coat them well, dip them into the bread crumbs and coat them completely with the bread crumbs.
  6. Meanwhile, heat oil in a pan for deep frying. When the oil is hot add the balls into them and fry them until golden and crisp.
  7. Remove them into a paper towel to remove excess oil.
  8. Serve them hot with tomato ketchup or a sauce of your choice or even a mint chutney.
