A good way to have children eat vegetables, delicious, healthy cheesy veggie pops is a great idea. It is great as an appetizer or a starter. An awesome recipe for pot lucks, kitty parties etc. These balls are loaded with a variety of veggies and cheese.
INGREDIENTS:
- 2 to 3 medium sized potatoes, boiled and mashed
- 1 capsicum, finely chopped
- 1 onion, finely chopped
- 1 cup finely cut carrots, boiled
- 1 cup finely cut beans, boiled
- 1 cup green peas, boiled / frozen peas
- 1 cup grated cheese
- 1 tbsp, red chilli flakes
- 1/2 tsp oregano
- 1/2 tsp black pepper powder
- 2 to 3 garlic, crushed
- 2 tbsp cornflour
- Salt to taste
- 1/2 cup bread crumbs
- Oil for deep frying
METHOD:
- In a large mixing bowl, add mashed potatoes, capsicum, onions, carrots, beans and green peas.
- Also add grated cheese, crushed garlic, red chilli flakes, oregano, black pepper powder and salt. Mix all the ingredients well to form a dough. If the dough is too sticky add little cornflour.
- Make small lemon size balls and keep aside.
- In another small bowl, add around 2 tbsp cornflour and water and make a smooth paste. The paste should be a flowy consistency so that it coats well.
- Now dip the veggie balls in the cornflour paste. Coat them well, dip them into the bread crumbs and coat them completely with the bread crumbs.
- Meanwhile, heat oil in a pan for deep frying. When the oil is hot add the balls into them and fry them until golden and crisp.
- Remove them into a paper towel to remove excess oil.
- Serve them hot with tomato ketchup or a sauce of your choice or even a mint chutney.
