Vegetable Pakoda


Vegetable pakodas or pakoras are quick deep fried snacks made with chickpea flour and veggies. It can be made on a weekend when left with a few veggies. You can enjoy these on a rainy day for a crunchy and extremely delicious snack and can be made easily when you have guests at home.

INGREDIENTS:
  • 1 big carrots, cut julienne 
  • 2 big onions, cut julienne
  • 1 bell pepper/capsicum, cut julienne
  • 1 large potato, cut juilenne
  • 1 cup spinach, chopped
  • 3 to 4 green chillies, slit
  • 2 tbsp coriander leaves, finely chopped
  • Few curry leaves, finely chopped
  • 1 cup besan/chickpea flour
  • 1 tbsp red chilli powder
  • 1/2 tsp fennel seeds, coarsely powder
  • 1/2 tsp ajwain
  • 1 tbsp coriander seeds, coarsely powder
  • Salt to taste
  • Oil for deep frying
METHOD:
  1. In a large bowl add besan, red chilli powder, ajwain, fennel seeds, coriander seeds, salt. Mix them well with a tbsp of oil. 
  2. Now add all the veggies, curry leave and coriander leaves and mix well with hands. Sprinkle some water and make the dough. All the veggies should be coated with the flour.
  3. Heat oil in a deep frying pan, when the oil is hot, put small dumplings of the mixture into oil and fry them until golden and crisp.
  4. Remove them into a kitchen towel to remove excess oil.
  5. Serve the mix vegetable pakodas hot with tomato ketchup or coriander mint chutney.
