Hara bhara kabab is an healthy vegetarian snack made of green leaves, potatoes,green peas and spices. These kababs are nutritious, extremely delicious with all goodness of greens. It can be served as a starter and an awesome kid friendly snack.
INGREDIENTS:
- 1 cup blanched spinach leaves
- 1/2 cup blanched fenugreek/methi leaves
- 1/2 cup mint leaves
- 1/2 cup boiled green peas
- 1/2 cup grated paneer
- 3 to 4 boiled and mashed potatoes
- 2 tbsp ginger green chilli paste
- 6 to 8 cashews, cut into pieces
- 1 tsp cumin seed powder
- 1/2 tsp garam masala powder
- 1/2 tsp amchur powder
- 2 to 3 tbsp corn flour
- Salt to taste
- Oil
METHOD:
- In a large bowl add boiled potatoes, green peas, spinach leaves, methi leaves, mint leaves, grated paneer.
- Also add the ginger chilli paste, cumin seed powder, garam masala powder, amchur powder, cashews and salt to taste.
- Mix well using your hands so that it forms a dough. If the mixture is too soggy add a tbsp corn flour and mix well.
- Make balls of required size and shape into round patties.
- Heat oil for deep frying and when the oil is hot fry these kababs to golden brown and crisp. You can even pan fry these kababs with a tbsp of oil and fry on both sides until brown.
- Serve these kababs hot with coriander mint chutney or tomato ketchup.
