Sabudana Vada


Sabudana Vada or Sagoo Vada is a popular deep fried snack from Maharashtra, India. It is served with spicy green chutney and along with hot cup of chai. It is best when eaten fresh. Sabudana Vada are the best option to have when fasting.

INGREDIENTS:
  • 1 cup sabudana or sagoo
  • 3 medium sized potatoes, boiled and mashed
  • 1 inch ginger, finely chopped
  • 4 to 6 green chillies, finely chopped
  • 2 tbsp coriander leaves, finely chopped
  • 1 tsp jeera or cumin seeds
  • 1/2 cup peanuts, roasted and crushed
  • Salt as required
  • 1 tsp lemon juice
  • Oil for deep frying
METHOD:
  1. In a large bowl, soak a cup of sabudana for 3 to 4 hours until they are soft. 
  2. Drain the water and rest it for about 30 to 45 minutes.
  3. Now in a large bowl add mashed potatoes, drained sabudana and peanut powder.
  4. Also add ginger, green chillies, cumin, salt, coriander leaves and lemon juice.
  5. Mix and mash well with your hands. 
  6. Prepare a soft dough, if you are not able to form a dough add another boiled potato and mash well.
  7. Prepare small patties from the dough and keep aside.
  8. Meanwhile heat oil for deep frying in a pan.
  9. Fry on a medium flame until they turn golden brown on both sides.
  10. Drain off excess oil on a kitchen towel.
  11. Serve it hot and crisp with spicy green chutney and a cup of tea.
