Sabakki Payasa / Sabudana Payasa


Sabakki Payasam or Sabudana Payasa/kheer is a popular festive sweet. As the name suggests, it is made from sago pearls. This payasam recipe is one of the easiest Indian dessert recipe that can be prepared in no time. 

INGREDIENTS:
  • 1/4th cup sabudana/sabakki/sagoo pearls
  • 1/4th to 1/2 cup sugar
  • 1 cup water
  • 11/2 cup milk
  • 2 tbsp ghee
  • 1/2 tsp cardamom powder
  • 8-12 cahews
  • 8-10 raisins 
METHOD:
  1. In a pressure cooker, add washed sago pearls, add water and turn on the flame. After 2 whistles, switch off the flame.
  2. In another heavy bottomed vessel, add milk and let it boil. Add the cooked sago into the milk. Keep stiring in a low to medium flame.
  3. When the milks thickens add sugar and stir well. Let it cook for about 3 to 5 minutes. Switch off the flame.
  4. In a small pan heat ghee, fry the cashews and raisins. Add them to the prepared payasam.
  5. Add a tsp of cardamom powder to the payasam and mix well.
  6. Sabudana payasam is ready to serve. Enjoy it either hot or cold.
