Carrot Halwa


Gajar halwa is a traditional slow cooked recipe of cooking grated carrots with milk, sugar, ghee and few dry fruits. Its a popular dessert during winters and present in most special occasions like festivals, celebrations and parties.

INGREDIENTS:
  • 2 cups of grated carrots  
  • 1 cup sugar
  • 2 cups milk
  • 2 to 3 tbsp ghee
  • 10 to 12 cashews, split
  • 10 to 12 raisins
  • 1 saffron strand
  • 1/2 tsp cardamom powder
METHOD:
  1. Wash, peel and grate the carrots using a hand grater or a food processor and keep it aside.
  2. In a thick bottomed pan or kadai, heat a tbsp of ghee.
  3. When the ghee is heated, add the grated carrots and fry them until the raw smell disappears.
  4. Now add the milk and let it cook on a medium to low flame. Stir in between. 
  5. When it starts boiling, add sugar and mix it well. Stir in between and keep scraping the sides too.
  6. Once the milk is 3/4th evaporated, add a tbsp of ghee.
  7. On a low flame, stir it continuously until the entire milk is evaporated and it starts becoming thick.
  8. Switch off the flame and meanwhile in a small pan heat a tbsp of ghee and roast the cashews and raisins.
  9. Now add the roasted dry fruits, a tsp of cardamom powder tho the carrot halwa. Mix it well.
  10. Enjoy the halwa hot or cold. Hot halwa with cold ice cream tastes delicious.
