Aloo Bonda


Aloo bonda is a popular South-Indian snack. It is a deep fried savory snack stuffed with potato spice mixture. Aloo bonda is crisp outside and soft inside. A favorite evening snack during winters loved by everyone coz its made up of potatoes.

INGREDIENTS:
  • 4 to 5 medium sized potatoes, boiled and mashed
  • 4 to 5 green chillies, finely chopped
  • 2 tbsp ginger, grated
  • Few curry leaves
  • 2 tbsp coriander leaves, finely chopped
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 2 tbsp lime juice
  • Salt 
  • 1/2 cup gram flour or besan
  • 2 to 3 tbsp rice flour
  • 2 tbsp red chilli powder
  • Water
  • Oil for deep frying
METHOD:
To make the potato stuffing:
  1. Heat a tbsp oil in a pan. When the oil is hot add mustard seeds and let it splutter.
  2. Add urad dal, chana dal, turmeric, grated ginger, green chillies, curry leaves and saute for a minure.
  3. Add the boiled and mashed poatoes, salt and mix well.
  4. Switch off the flame. Add chopped coriander leaves and lime juice. Mix well and keep it aside.
  5. When the mixture cools make even lemon sized balls. Keep them aside.
To make the batter:
  1. In a large bowl, add gram flour, rice flour, red chilli powder, salt and mix well.
  2. Add water and make a thick consistency batter. It should coat the potato stuffing balls.
To make the bonda:
  1. Heat oil for deep frying in a pan.
  2. When the oil is hot, dip the potato balls into the batter and coat them well. Drop it in hot oil.
  3. Each batch you can fry about 4 to 5 balls depending on the size of your pan.
  4. After a minute, begin to stir and fry until golden.
  5. Repeat making all until all the balls are done.
  6. Drain the golden fried bonda on a paper towel to remove excess oil.
  7. Serve aloo bonda hot with a hot cup of tea.
