Aloo bonda is a popular South-Indian snack. It is a deep fried savory snack stuffed with potato spice mixture. Aloo bonda is crisp outside and soft inside. A favorite evening snack during winters loved by everyone coz its made up of potatoes.
INGREDIENTS:
- 4 to 5 medium sized potatoes, boiled and mashed
- 4 to 5 green chillies, finely chopped
- 2 tbsp ginger, grated
- Few curry leaves
- 2 tbsp coriander leaves, finely chopped
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 1 tsp urad dal
- 1 tsp chana dal
- 2 tbsp lime juice
- Salt
- 1/2 cup gram flour or besan
- 2 to 3 tbsp rice flour
- 2 tbsp red chilli powder
- Water
- Oil for deep frying
METHOD:
To make the potato stuffing:
- Heat a tbsp oil in a pan. When the oil is hot add mustard seeds and let it splutter.
- Add urad dal, chana dal, turmeric, grated ginger, green chillies, curry leaves and saute for a minure.
- Add the boiled and mashed poatoes, salt and mix well.
- Switch off the flame. Add chopped coriander leaves and lime juice. Mix well and keep it aside.
- When the mixture cools make even lemon sized balls. Keep them aside.
To make the batter:
- In a large bowl, add gram flour, rice flour, red chilli powder, salt and mix well.
- Add water and make a thick consistency batter. It should coat the potato stuffing balls.
To make the bonda:
- Heat oil for deep frying in a pan.
- When the oil is hot, dip the potato balls into the batter and coat them well. Drop it in hot oil.
- Each batch you can fry about 4 to 5 balls depending on the size of your pan.
- After a minute, begin to stir and fry until golden.
- Repeat making all until all the balls are done.
- Drain the golden fried bonda on a paper towel to remove excess oil.
- Serve aloo bonda hot with a hot cup of tea.
