Vegetable Pulao



Vegetable pulao is a spicy rice dish prepared by cooking rice with various vegetables and spices. It can be served for lunch and also a quick lunch-box recipe.

INGREDIENTS:
  • 1 cup rice, washed
  • 1 cup chopped vegetables (carrots, beans, potatoes, peas)
  • 1 medium onion, thinly sliced
  • 1 bay leaf
  • 1/2 inch cinnamon stick
  • 2-3 cloves
  • 2-3 cardomom
  • 1 star anise
  • 1/2 cup fresh grated coconut
  • 6-8 green chillies
  • 1 small bunch mint/pudina leaves
  • 1 tsp poppy seeds
  • 1 tsp roasted dalia
  • Ghee or oil
  • Salt to taste  
METHOD:

To grind:
  1. In a mixer jar, add grated coconut, green chillies, mint leaves, poppy seeds, dalia, and whole spices.
  2. Grind to a smooth paste.
  3. In a pan, add ghee and fry the ground paste until it smells good.
To make Vegetable pulao:
  1. In a pressure cooker, add ghee or oil.
  2. Add onions and saute until translucent. 
  3. Add chopped vegetables and saute until they are half done.
  4. Add the ground paste and mix well on a medium flame.
  5. Add washed rice to the mixture and saute for a minute.
  6. Now add 2 cups of water, salt as required and mix well.
  7. When it starts boiling, close the lid of the pressure cooker. 
  8. After 3 whistles, let it cool completely.
  9. Mix well and serve hot with curd raita. 
Tip: You can add bread cubes fried in ghee for an enhanced taste and flavor.
