Ubbu rotti/Billi holige is a popular breakfast recipe in the state of Karnataka. They are prepared by stuffing rice flour dough in side maida dough.
INGREDIENTS:
- 1 cup maida or all purpose flour
- 1 cup rice flour
- Oil
- Salt to taste
- Water
METHOD:
For preparing dough:
- In a mixing bowl, add maida flour, salt.
- Knead the dough soft by adding water little by little.
- The dough should be softer than chapati flour.
- At the end, add 2 tbsp oil, knead again and cover and keep aside for atleast 45 minutes.
For preparing stuffing:
- Boil around one and half cup of water in a pan.
- Add salt to taste and a tbsp oil.
- When it starts boiling, add rice flour and stir it continuously for couple of minutes.
- Switch off the flame and once warm knead it by greasing oil.
For preparing Ubbu rotti:
- Dust flour to your fingers, take lemon size maida dough and make it flat.
- Place a lemon size rice flour stuffing inside and seal it. Press gently to flatten it.
- Take a rolling board and dust it with flour. Roll the stuffed dough using rolling pin.
- On a medium hot tawa, cook the rotti on one side.
- When it puffs or bubbles start appearing, flip it over and cook the other side.
- Apply oil and cook it both sides.
- Serve hot with any curry of your choice.
Tip: Serve it with baingan bartha, tomato-onion gojju or stuffed brinjal curry.
