Paneer Sandwich


An easy to make snack recipe that you can prepare in a jiffy. Paneer sandwich is truly delicious, prepared with fresh bread, paneer and veggies. This yummy sandwich can be served in kitty parties, pot lucks and get-together.

INGREDIENTS:
  • 200 gms grated/crumbled paneer
  • 2 medium onions chopped
  • 1 large capsicum chopped
  • 1 cup sweet corn 
  • 2-3 green chillies, finely chopped
  • Salt to taste
  • Green chutney as required
  • Butter
  • 10-12 fresh bread slices, whole wheat or brown or multigrain or white
METHOD:

To prepare green chutney:
  1. In a mixer add equal amount of mint and coriander leaves, 4-5 green chillies, 1/2 inch ginger, 2 cloves of garlic, 1/2 tsp. jeera, 4-5 cashews.
  2. Blend together with required amount of salt to form a smooth paste.
  3. Squeeze in some lemon juice to retain the green color and keep aside.
To prepare the stuffing:
  1. In a pan, add butter. When the butter melts add onions, green chillies and saute for a minute.
  2. Add capsicum and sweet corn and saute them until crunchy.
  3. Add grated paneer and season with salt as required. Saute until the paneer is slightly cooked.
  4. Switch off the flame and let the mixture cool for a while.

To prepare the sandwich:
  1. Pre-heat the sandwich maker.
  2. Apply butter to the bread slices.
  3. Spread the green chutney on one side of the bread.
  4. Now place the prepared stuffing on the bread slice. Close it with another slice of bread.
  5. Place the paneer sandwich into the sandwich maker and let it grill until crisp.
  6. Remove and serve the grilled paneer sandwich hot with any dip or sauce of your choice.
