A delicious paneer slices stuffed with green chutney, kashmiri
chillies with nuts, onion-tomato gravy which makes amazing Hara Paneer Pasanda.
Serves - 2
INGREDIENTS:
- 400gms paneer
- 2-3tbsp cream
- 2 tbsp cornflour
- Kasoori methi
- Ghee
- Oil for deep fry
For green chutney:
- 1 cup coriander leaves
- 2 tbsp mint leaves
- 5 green chillies
- 1 piece ginger
- 2 garlic cloves
- 1 tbsp grated paneer
- 1 tbsp cashews
- Salt to taste
For onion-tomato gravy:
- 2 tbsp ghee
- 1 tsp cumin seeds
- 4 dry red chillies
- 2 small onion
- 3 tomatoes
- 1 cup curd
- 1 tbsp cashew nuts
METHOD:
- Cut paneer into pieces and make a sandwich stuffing the ground green chutney and keep them aside.
- Make a paste of corn flour, salt and water. Coat the paneer sandwiches with the paste and deep fry in the oil until golden brown.
- In a pan add around 2tbsp oil and add onions and fry until they turn transparent. Then add tomatoes amd cook them until done.
- In a mixer grinder add red chillies, cumin seeds, cashews and the fried onion-tomato mixture and grind to a smooth paste.
- Cook the paste in a pan with ghee for about 8-10min in a medium flame. Add fresh curd and let it cook for another 5min.
- Add salt as per taste, kasoori methi, coriamder leaves, and fresh cream.
- Add the fried paneer sandwiches to the gravy and let them cook for another couple of minutes.
- Serve the gravy with chapati, roti, phulkas, naan etc.
