Aloo paratha is a traditional North Indian recipe served with raita, pickle or butter. It is a whole wheat flatbread stuffed with spicy mashed potatoes.
INGREDIENTS:
- 2 medium potatoes, boiled and mashed
- 2 green chillies, finely chopped
- 2 tablespoons finely chopped coriander leaves
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala powder
- Salt as per taste
- Oil to cook the parathas
For the dough:
- 2 cups wheat flour
- 1/4th teaspoon salt
- 1 teaspoon oil
- Water, to knead the dough
METHOD:
Make the dough:
- In a bowl, mix the wheat flour, salt and oil by adding water as required.
- Knead to form a smooth and soft dough for 5-7 minutes.
- Cover and let the dough rest for 15 to 20 minutes.
- Divide the flour into 4-6 equal parts.
Make the filling:
- In a bowl, add the boiled and mashed potatoes.
- Add chopped green chillies, coriander leaves, red chilli powder, cumin powder, garam masala powder and salt and mix well.
Make the parathas:
- Take one of the dough ball, with a rolling pin roll the dough into a small circle.
- Place 3-4 tablespoons of the filling in the center.
- Bring all the edged together and seal it together.
- Flatten the dough using hands and roll using a rolling pin to a 6-7 inch circle.
- On a hot tawa, transfer the rolled paratha and cook on one side for about a minute or two.
- Apply oil on one side and flip it to cook on another side by applying oil.
- Press with a spatula and cook the parathas on both sides until brown spots appear.
- Repeat with the remaining dough balls.
- Serve the hot parathas with any gravy, dal, butter, curd or pickle.
