Aloo Paratha



Aloo paratha is a traditional North Indian recipe served with raita, pickle or butter. It is a whole wheat flatbread stuffed with spicy mashed potatoes.

INGREDIENTS:
  • 2 medium potatoes, boiled and mashed
  • 2 green chillies, finely chopped
  • 2 tablespoons finely chopped coriander leaves
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala powder
  • Salt as per taste
  • Oil to cook the parathas
For the dough:
  • 2 cups wheat flour
  • 1/4th teaspoon salt
  • 1 teaspoon oil
  • Water, to knead the dough
METHOD:

Make the dough:
  1. In a bowl, mix the wheat flour, salt and oil by adding water as required.
  2. Knead to form a smooth and soft dough for 5-7 minutes.
  3. Cover and let the dough rest for 15 to 20 minutes.
  4. Divide the flour into 4-6 equal parts.
Make the filling:
  1. In a bowl, add the boiled and mashed potatoes.
  2. Add chopped green chillies, coriander leaves, red chilli powder, cumin powder, garam masala powder and salt and mix well.
Make the parathas:
  1. Take one of the dough ball, with a rolling pin roll the dough into a small circle.
  2. Place 3-4 tablespoons of the filling in the center.
  3. Bring all the edged together and seal it together.
  4. Flatten the dough using hands and roll using a rolling pin to a 6-7 inch circle.
  5. On a hot tawa, transfer the rolled paratha and cook on one side for about a minute or two.
  6. Apply oil on one side and flip it to cook on another side by applying oil.
  7. Press with a spatula and cook the parathas on both sides until brown spots appear.
  8. Repeat with the remaining dough balls.
  9. Serve the hot parathas with any gravy, dal, butter, curd or pickle.
